When I started Criterium, it was with the belief that every part of the specialty coffee world deserves recognition — especially the parts often hidden behind the scenes. While baristas get deserved attention for their skill and hospitality, there is another group just as vital to every great café: the technicians. These are the people who keep machines running, protect café investments, and ensure every shot of espresso or filter brew is possible. Without them, quality coffee would be a dream, not a reality.
As nominations for Criterium close soon, I want to shine a light on why technicians deserve your vote and why your nomination can give them the credit they have earned through years of quiet, essential work.
Why technicians are essential to specialty coffee
Behind every café serving consistent coffee is a technician who understands how espresso machines, grinders, brewers, and water systems work. Equipment failures happen in every café, no matter how new or expensive the gear. When they do, technicians are the first call. Their ability to diagnose problems, source parts, and complete repairs quickly keeps cafés open and customers happy.
Technicians also handle preventative maintenance. Regular checks on boilers, pumps, seals, and grinders catch problems before they escalate. This saves cafés money and reduces downtime. Good technicians know that maintaining equipment is just as important as fixing it.

A technician who only fixes problems as they appear can keep a café running temporarily. A great technician goes further. They build relationships with café owners, train staff on proper cleaning and maintenance, and help dial in machines for optimal performance. I have seen technicians work late into the night so cafés can reopen the next morning. I have watched them calmly troubleshoot equipment that even experienced baristas struggled to understand. I have heard café owners say technicians saved their businesses during difficult times.
Despite their impact, technicians rarely receive praise. Customers often do not know they exist. Yet every perfect shot of espresso, every consistent latte, owes something to a technician’s effort. Recognizing technicians through Criterium gives credit where it has long been overdue.
How technicians protect quality and consistency
Consistency is the difference between a café with loyal customers and one that struggles to keep people coming back. Consistency starts with reliable equipment. An espresso machine with temperature instability will produce shots that vary wildly in taste. A grinder out of calibration will throw off extraction.

Nominations for Best Technician are open until Saturday, 5 July at 23.59. The five technicians with the most nominations will advance to the Top 5 shortlist. Voting on the Top 5 will open on Monday, 7 July at 09.00 and close on Saturday, 12 July at 23.59. Winners will be announced on FLTR Magazine.
