Heat the part that actually brews the coffee

An espresso machine can show the correct boiler temperature while its brew group is still warming up. Important to know becasue water passes through the brew group before it reaches the coffee. So if the group’s too cool or too hot, the number on the display is definitely not telling the full story.

The ECM Estetika and ECM Discover use a Dual Boiler System with 3CT and ECM’s Active Core group:

  • 3CT controls temperature at three points: the brew boiler, steam boiler and brew group.
  • Active Core places heating cartridges inside the brew group. Instead of relying entirely on circulating hot water, the machine heats the group directly.

This system needs less hot water in reserve and therefore uses less energy without sacrificing temperature control. A solenoid valve also lets the machine deliver a programmed amount of water and stop automatically.

Now that won’t replace a good espresso recipe. But it does remove the need to end every extraction by eye.

The Estetika is a beast. It can brew after six minutes. You can set the dose, adjust preinfusion and use the Shot Observer to follow the extraction. Cleaning and filter reminders help you manage routine maintenance.

The Estetika is also easier to share. Once you’ve set a recipe, someone else can use the same water volume without trying to copy your timing.

Discover brings it behind the bar

The reality of a café is that it has several baristas using the same machine across different shifts. And everyone works a little differently, especially when orders start piling up.

The Discover lets a café programme water volume and preinfusion for each group. It also records shot numbers, provides extraction feedback and reminds the team about cleaning and filter changes.

Now your recipes don’t depend on who happens to be working.

Let the grinder weigh the dose

Most grinders estimate dose by running for a set number of seconds. That gets close. But the weight can change as beans age, or the grind setting moves or the hopper empties. And even a small difference can affect how an espresso runs.

The ECM Exacto weighs coffee while grinding and stops when it reaches the programmed dose.

Its built-in scale can recognise up to three portafilters, each with its own setting. Grinding can begin automatically when you insert the portafilter, or you can start it manually.

The Exacto also offers grind-by-time and manual modes. You can choose the workflow that suits you.

I don’t want to overstate the innovation here. Grind by weight won’t fix the wrong grind setting or rescue bad coffee. But it does remove the repeated cycle of grinding, weighing and correcting the dose.

At home, that saves time. In a café, it can also reduce waste and keep recipes closer to their target.

Improve the heat exchanger instead of replacing it

The ECM Mechanika MAX II is the ultimate heat exchanger machine. It uses one boiler with separate water circuits, allowing you to brew espresso and steam milk at the same time. Keeping the machine relatively compact while still giving you plenty of steam.

The compromise has always been temperature control.

ECM addresses that with BTC and the ECM-61 Core Heat group.

BTC stands for Brew Temperature Control. It lets you change the brewing temperature in 1°C increments between extractions.

Core Heat adds heating cartridges to the brew group, helping it warm sooner. ECM has also changed the route water takes through the machine to reduce temperature variation.

Over and above all that, the Mechanika MAX II can brew after 12 minutes, half the heat-up time of the previous model. Maybe I’ll upgrade from my Mechanika Max I after all.
